Semi Homemade Red Velvet Cookies from a Mix
It is funny how families tend to have “their set recipes”. Ya know, the go to dessert, the family tradition favorite.
Well for me, red velvet wasn’t one of those. I am sort of new to red velvet. I found a recipe a few years ago in a BHG magazine focused on Valentines, and I’ve loved it ever since.
But since I learned about it, I haven’t wasted anytime to figuring out ways to adapt it in. It has a lot going for it:
- It is slightly chocolaty
- It is baked (I really love baked goods)
- a great color for holidays or other special events (like this boys baby shower, I did Blue Velvet)
So the other day when I did my Christmas table setting and I needed a red cookie to sit on the table this was the perfect option. Technically I bought those at Walmart, but they were so good, I had to make some for myself.
Since I’ve been as busy as the Keebler elves making and photographing cookies, I decided to do a really quick option and use a sugar cookie mix.
Super easy, they are delicious, and I can still claim that they are homemade! While I still want to work out a completely homemade recipe, I’ve run out of time for now but, I am sure I can revisit this one later! Wink!
Red Velvet Cookies Recipe (semi-homemade)
1 Betty Crocker Sugar Cookie Mix (unprepared) | 1 Tbsp. Red Food Coloring |
1/2 cup Butter (NOT melted) | 3 Tbsp. cocoa Powder |
1 egg | Optional – White Chocolate Chips |
Preheat the oven to 375 degrees. In a bowl, combine all ingredients just until a soft dough forms, add optional white chocolate chips and incorporate. Scoop dough with a medium cookie scoop, and place on cookie sheet about 2 inches apart. Bake 8-9 minutes.
I frosted them with a store bought cream cheese frosting and added sprinkles. If you don’t have sprinkles, you can break up one cookie into fine crumbs and sprinkle the frosting with the cookie crumbs, it looks really nice!
- Do NOT use use shortening, the cookies are too greasy and really fall.
- Using the white chocolate chips in the cookies is like adding baked in frosting, it made the cookies fantastic! If you do, eat them while they are hot, or pop them in the microwave for 15-20 seconds to soften the chips.

About mid photo-shoot my girls came into the kitchen, and saw this big stack of cookies. Well it was apparently too much for my 2 year old to have an entire stack of cookies at eye level. I caught the first cookie snatcher attempt mid snapping, without any warning! Then, I loved the picture so much, I had to let me 3 year old in on the action- obviously they didn’t put up much of a fight!! I think that is my favorite picture from this recipe!

Ingredients
- 1 Betty Crocker Sugar Cookie Mix unprepared
